I don’t know about y’all but we have a hard time getting salads to the table regularly. It’s not that we don’t like salads but it seems like after the main dish and maybe a side is prepared, salads seem like so much work to me that our salads typically end up being pretty boring–lettuce, maybe some chopped carrots, cucumbers or a tomato and that’s it. Not that there’s anything wrong with that (and yes, I should be thankful my kids will even eat a leafy green salad). But it can get kind of b-o-r-i-n-g sometimes after awhile!

So in an effort to up our options, I asked a bunch of my flood blogger friends to share recipes they had on their blog to become re-inspired with some new ideas! And boy, did they deliver! I’ve got more than 100 Leafy Greens Salads to Enjoy Year Round in this roundup. That means you can enjoy, on average, two new salads every week for an entire year! How’s that for a challenge? I specifically asked for salads that included leafy greens because we all know that leafy greens like romaine lettuce, spinach or kale, are full of great nutrients and fiber so they’re extra good for you. I’m all for dishes that are flavorful but are good for you too. That’s a double bonus in my book!

Some of these Leafy Greens Salads have a mean protein like chicken but you can easily add a simple grilled or baked fish or chicken to any of these recipes to make it a complete meal. But to be honest, I find that sometimes a salad filled with lots of tasty ingredients like a variety of fruits or vegetables along with toppings like dried fruit or nuts or crumbled cheese is filling enough to make it a meal–perfect for lunch or dinner.
