I love to bake, but making any sort of cutout cookie can challenge my patience and short attention span! Plus, finding a good gingerbread cookies recipe is a challenge in itself!

However, both my little ones have been sick and Haiden has been requesting gingerbread men cookies for the past several days.

Since I’d do my best to give my kids anything they wanted, especially when they’re unwell, making cookies doesn’t seem like such a chore 🙂

What I love about this gingerbread cookie recipe

I have to say, my favorite thing about holiday baking, especially this recipe, is that it reminds me of my grandma.

She would make gingerbread men cookies every year before Christmas. She would always press 3 raisins down the center for buttons, and I loved how dried out and chewy they got when baking them.

Her cookies were always the perfect balance of crispy and chewy. It took me forever to realize that the it’s the combination of butter and shortening that creates that amazing texture.

It’s funny, I had forgotten all about the raisins on my grandma’s gingerbread men until I started writing about it. I’ll definitely be including them as a decoration in my next batch!

Apart from the nostalgia, there are plenty of other things to love about these gingerbread cookies!

First, they can be made ahead of time and frozen.

You can make just the dough, roll it and freeze it into sheets that are ready for cookie cutters when you thaw them.

You can also bake the cookies and freeze them. You’ll be able to decorate them after they’ve thawed, so the icing is fresh clean.

Another thing to love about these cookies is that they’re a blast to decorate. I like to pipe simple lines of icing, while my mom likes to cover them from corner to corner with frosting.

When my kids were really little, I’d do the icing and let them go to town with different sprinkles. Now that they’re older, they alternate between wanting to do the piping, frosting or sprinkling.

The whole experience of making, decorating, and savoring these cookies is just something truly special. It’s a tradition that brings people together and creates lasting memories, just like the ones I have with my grandma.

Kitchen equipment tips

These are just a few notes I have from my personal experience baking. I’m not a pro, but these particular products have worked for me!

Rolling pin

This is the perfect rolling pin. Seriously. Look at it. You can’t tell me that it won’t solve all your dough rolling problems.

Cookie cutters

If you’re looking for quality cookie cutter suggestions, I have to say that the Wilton Comfort Grip Cookie Cutters are my favorite.

The metal cuts through dough easily, and the grip reinforces the shape of the cookie cutter so it doesn’t get bent out of shape.

Cookie sheets

I like using my Nordicware half-sheet pans as cookie sheets. They’re sturdy but not heavy, they heat evenly and they’re big.

I really like that I can maximize the amount of cookies I can get into the oven at the same time!

Stand mixer

To be honest, my stand mixer usually helps me cheat and take shortcuts with most cookie recipes.

For reference, I have the a KitchenAid pro series mixer, just like this one. I’ve had it since 2005 and it’s still going strong.

I usually dump all the ingredients but the flour into the bowl of my KitchenAid pro series mixer and cream them together using the special paddle attachment with the rubber scraper.

Then I add the flour to the bowl, turn the mixer on low and let the beater circle the bowl two or three times.

My dough is never overmixed, and the Kitchenaid makes the dough come together in minutes.

Cookie sheet pans

I also like using my Nordicware half-sheet pans as cookie sheets. They’re sturdy, they heat evenly and they’re big. I really like that I can maximize the amount of cookies I can get into the oven at the same time!

This is my favorite gingerbread cookies recipe. I like that it comes together easily.

FAQs

Should gingerbread men be soft or crunchy? ›

Don't overbake them.

The cookies should still be slightly soft when you take them out of the oven. Most regular-sized gingerbread cookies will take 9-10 minutes, but you might need a little more or less time depending on whether your cookie cutters are small or extra large.

How do you keep gingerbread from spreading men? ›

Chill and Bring to Room Temperature: Chill the dough for at least two hours or overnight, but make sure to bring it back to room temperature before rolling and cutting. Space Out on Baking Sheet: Leave enough space between each cookie on the baking sheet to prevent them from spreading into each other.

Why are my gingerbread men so hard? ›

“There are some gingerbread recipes that are hard right after baking and need to sit for a few days to soften. Molasses and honey hardens gingerbread, but as the sugar absorbs moisture, it will get softer.”

Do you decorate gingerbread men before or after baking? ›

Let baked gingerbread cookies cool completely before you decorate them.

What happens if you don't chill gingerbread dough? ›

Forgetting to chill the dough.

It's tempting to want to roll out the dough as soon as it comes together, but let it have a little time to rest. Chilling it for at least two hours or overnight gives the ingredients a chance to absorb one another, making it a whole lot easier to roll out the dough without it cracking.

How long should you chill gingerbread dough? ›

Divide the dough into two thick disks and wrap each disk in plastic wrap. Refrigerate until chilled, about 3 hours. (The dough can be prepared up to 2 days ahead.) To roll out the cookies, work with one disk at a time, keeping the other disk refrigerated.

How do you know when gingerbread men are done? ›

Gingerbread Cookies are done when they are set and begin to brown slightly at the edges. They will harden further as they cool, so avoid overbaking so you don't end up with hard, crunchy gingerbread! Underbake slightly to achieve soft, slightly chewy gingerbread cookies.

Why are my gingerbread cookies spreading so much? ›

Baking cookies in a too-cool oven will cause the fat to melt before your cookies set up, leading to spreading,” Dawn says. Grab an oven thermometer the next time you're in the grocery store so you can be sure your oven is at the correct temperature.

What happens if a gingerbread man gets wet? ›

Haugh's Kindergarten students worked like scientists to predict what would happen if the Gingerbread Man did get wet, then conducted an experiment and reached conclusions based on their results. They learned that cookies get soggy in water and fall apart!

What happens if you add too much butter to gingerbread cookies? ›

An excessive amount of butter makes it where the flour is unable to absorb the combined fat, which causes the cookie to spread too widely and the sugar to carbonize more easily because it's surrounded by too buttery a dough.

What are the three types of gingerbread? ›

The three distinct types of gingerbread are brown gingerbread, wafer-based gingerbread and honey gingerbread.
  • BROWN GINGERBREAD.
  • WAFER GINGERBREAD.
  • HONEY GINGERBREAD.

Why do you put molasses in gingerbread? ›

The deep, caramel-like sweetness of molasses pairs perfectly with the warm spices of ginger, cinnamon, and cloves, creating the iconic flavor profile of these classic treats. The choice of molasses over other sweeteners adds a depth and complexity that elevates gingerbread to a cherished holiday tradition.

Should I use parchment paper for gingerbread cookies? ›

Silicone mats are a great reusable alternative, as well! But parchment paper is always reliable. Our Gingerbread Men here at Muddy's Bake Shop were baked on parchment, and they give parchment two thumbs up!

Can I skip cloves in gingerbread cookies? ›

Can I Omit the Cloves? You can skip the ground cloves if you need to in gingerbread cookies but we really like that warmth from the spices.

What is the best way to decorate gingerbread men? ›

One of our favorite aspects about making gingerbread cookies from scratch is being able to decorate them after they cool. Sprinkles, icing, gum drops, mints, chocolates—you can use all these edible items and more to give your cookies their own unique personalities.

Are gingerbread men supposed to be hard? ›

What they should not be is hard. I won't even make a joke about hard gingerbread men (other than this one), but if your gingerbread cookies are hard, then you are doing things wrong.

How do you know when gingerbread men are cooked? ›

Bake for 12 minutes for light golden and mostly soft (though slightly crisp on edges), or 14 minutes for deeper golden and crisp. The gingerbread men will be soft out of the oven but will firm up as they cool.

Why is my gingerbread crunchy? ›

Keep in mind that the longer the cookies bake, the harder and crunchier they'll be. For soft gingerbread cookies, follow my suggested bake times. Allow cookies to cool for 5 minutes on the cookie sheet.
